To start simply chop your mango, watermelon, cucumber and mint.

After all of your produce is prepped, whisk together your lime juice, olive oil and salt to taste. Combine everything in a bowl and enjoy! 

There’s really no going wrong with this yummy, plant-based recipe! Feel free to use your creative liberties with ratios and adjust to your personal taste and preferences.

Added tips:
* If your watermelon isn't very sweet try adding a little honey to your dressing.
